Wooden Soul #4 is a Sour Blonde Ale aged in 9 Sauvignon Blanc barrels and 3 California red wine barrels housing a native Brett strain, further aged on grapefruit. This beer is complex blend drawn from 12 select oak barrels, and fermented with more than 4 strains of Brettanomyces and several strains of Lactic Acid Bacteria. We used the whole grapefruit! Chopped up to expose interior of fruit. So there is character from the zest, pith, and juice cells. We even juiced and zested some for good measure!
Hops and Malts: Blonde base
Bacteria: Pediococcus, mulitple Lactobacillus strains
Yeast: 4+ different strains of Brett
Cellaring: 1.5 years in Sauvignon Blanc barrels, aged on whole grapefruits
