Wooden Soul #3 is a Sour Blonde Ale aged in Sauvignon Blanc barrels, further aged on Door County tart red cherries. The oak barrels are sourced from the Ferrari-Carano vineyards of Northern California. This beer is complex blend drawn from 22 select oak barrels, and fermented with four strains of Brettanomyces and several strains of Lactic Acid Bacteria. The sour blonde ale is transformed into a pink rose colored ale from it's aging on 1.4 pounds of cherries per gallon. The flavor and aroma of this beer is a pronounced tart red cherry, accompanied by red fruity esters, and lemon tartness.
